Tiramisu cookies with mascarpone and white chocolate

Filled tiramisu cookies
Delicate cocoa stars with a fine coffee aroma, a filling of mascarpone and white chocolate, and a decoration of powdered sugar and cocoa.

What I particularly love about tiramisu is the combination of coffee, cocoa, and mascarpone. That's exactly what I wanted to recreate on my cookie plate. And that's how these little tiramisu stars came about. The shortcrust pastry has a delicate coffee and cocoa flavor, and it's filled with a light cream made from mascarpone and white chocolate.

What I love most is the little hole in the middle, through which you can see the filling. I dust the tops with powdered sugar and cocoa. If you like to bake a special cutout cookie for your Christmas baking, try these stars.

Why you'll love these tiramisu cookies

  • Fine coffee aroma. Two tablespoons of brewed coffee and a little baking cocoa give the shortcrust pastry its flavor.
  • Creamy and filled. Mascarpone and white chocolate create a light cream that goes well with the dark stars.
  • Easy to cut out. You need a star-shaped cookie cutter and a small round cookie cutter for the center.
  • Looks lovely on the cookie plate. Powdered sugar and cocoa give the stars their two-tone surface.
  • Prepare well. You can bake the stars the day before and fill and decorate them the next day.

Ingredients for the tiramisu cookies

  • Cold butter: Make the shortcrust pastry nice and crumbly. Cut it into small cubes so it's easier to work in.
  • Brewed coffee: Add it directly to the dough. Let it cool down beforehand so the butter stays cool while kneading.
  • Baking cocoa: This gives the dough its chocolate flavor. I use drinking cocoa powder for dusting.
  • egg yolkBinds the shortcrust pastry. Add wheat flour type 405 and sugar.
  • Mascarpone and white chocolate couvertureThese are the base for the filling. Icing sugar can be stirred in smoothly and sweetens the cream.

My tips for tiramisu cookies

  • Roll out evenly. The stars bake more evenly with a dough thickness of about 3 mm. If the dough becomes soft when cutting out the shapes, briefly put it back in the refrigerator.
  • Only cut a hole in half of it. This way you have a suitable base for every star with a hole.
  • Check towards the end of the baking time. The cocoa makes the dough dark from the start. After about 7 minutes, check the stars and make sure the edges look firm.
  • Allow the stars to cool completely before filling. Allow the melted chocolate to cool slightly. It should still be liquid when stirred in.
  • Dust the lids before assembling them. Using a fine sieve and a piece of baking paper as a cover, you can first dust one half with powdered sugar and then the other half with cocoa.
