Super fruity and delicious blueberry coconut recipe
The result of this small purchase: My baking passion has been fully ignited! I promised you I'd bake a recipe for you using this little treasure. And here it is at last: The dreamy Blueberry Coconut Cake.
Before I share the Blueberry Coconut recipe with you, let me rave for a moment. Imagine a velvety blend of fruity blueberry compote and creamy coconut. A heavenly combination that elevates any coffee break and is so easy to prepare. And as the highlight (yes, the finishing touch), the coconut flake cream on top is simply enchanting.
Recipe: Blueberry Coconut
- 200 g soft butter
- 200 g + 40 g sugar
- 2 eggs
- 250 g flour
- 1 level teaspoon of baking powder
- Juice of 2 limes
- 1 glass (750 ml) of blueberries
- 30 g cornstarch
- 125 g desiccated coconut
- 200 g double cream
Instructions
- Grab your favorite springform pan. I always use the square one that's 24 x 24 cm, but if you only have a round one with a 26 cm diameter, that works perfectly fine too. Then preheat the oven – to 175 degrees Celsius for electric ovens and 150 degrees Celsius for fan-forced ovens. And remember to grease the pan well with butter.
- For the cake batter, use a classic method: Cream together 200g butter and 200g sugar, then beat in the eggs one at a time. Mix the flour with the baking powder and stir it into the egg-sugar mixture. Spread the batter into the prepared pan and bake for about 20 minutes.
- Now comes the highlight: the compote. Bring lime juice and blueberries to a boil. Mix cornstarch with a little water until smooth, then let it simmer briefly. A wonderful aroma fills the kitchen!
- And for the finishing touch: Mix the desiccated coconut with 40g of sugar and the double cream.
- Once the cake batter is prepared, spread the berry compote on top and then top it with your coconut glaze. Bake for another 15 minutes and voilà!
- Let the Blueberry Coconut Cake cool, remove it from the mold and cut it into the desired rectangles.

5 tips to get the most out of this Blueberry Coconut recipe:
- Fresh blueberriesAlthough that Blueberry Coconut Recipe If the recipe suggests a jar of blueberries, you can use fresh blueberries if they are in season. This will give the compote a more intense and fresher flavor. Remember to add some liquid (e.g., water or extra lime juice) to compensate for the missing juice from the jar.
- Even distributionMake sure the berry compote and coconut topping are evenly spread over the pre-baked crust. This ensures that every bite of this heavenly cake has the perfect balance of tart berries and creamy coconut.
- Roast the shredded coconutTo the Blueberry Coconut To give the cake an extra depth of flavor, you can lightly toast some of the shredded coconut beforehand in a dry pan until golden brown. This will give the cake a delicious roasted aroma.
- use lime zestFor an extra citrusy note, you can grate the zest of the limes and add it either to the batter or the berry compote. The zest contains essential oils that give the cake a pleasant freshness.
- Allow the cake to cool completely. It might be tempting to cut into the cake as soon as it comes out of the oven, but be sure to let it cool completely. This allows the flavors to set better and makes the cake easier to cut without the coconut topping or compote running.
A Blueberry Coconut Cake, This recipe is not only a visual highlight on any coffee or tea table, but also a culinary delight. The combination of sweet blueberries and the exotic note of coconut flakes makes it one of my new favorites. Try it and enjoy!
