Why you'll love these pistachio cookies
- Delicate shortcrust pastry: The ground almonds make the cookies especially fine.
- Creamy fillingThe pistachio cream provides a wonderful nutty flavor.
- To prepare: The dough can be chilled and cut out easily.
- A real eye-catcher: With chocolate and chopped pistachios, the cookies look really pretty.

What ingredients do you need for the pistachio cookies?
For the shortcrust pastry, you'll need flour, sugar, vanilla sugar, ground almonds, egg yolks, butter, and a pinch of salt. The almonds give the cookies a delicate flavor and, together with the butter, ensure a tender texture.
For the filling, I use pistachio cream. I also add milk chocolate, white chocolate, and a few chopped pistachios for decoration. As usual, you'll find the exact quantities in my recipe card below.
My tips for perfect pistachio cookies
- Chill the dough well: Let the shortcrust pastry rest in the refrigerator before rolling it out. This makes it easier to work with and helps the cookies retain their shape better during baking.
- Cut out evenly: I use a round cookie cutter with a 5 cm diameter. I also make a small hole in the center of half of the cookies.
- Don't bake for too long. The cookies need about 10 minutes at 180°C. They should only become lightly golden brown so that they remain nice and tender.
- Fill only after cooling: Spread the fully filled cookie bases with pistachio cream. This will allow the filling to be distributed evenly.
