Delicious Pie with Raspberry Curd Recipe

Right now, I'm finding it really hard to choose a recipe from the new LECKER Bakery magazine, as all the pictures and recipes look absolutely delicious. To make the decision easier, I gave the magazine to my children today, and they decided that Mom should bake the pie with raspberry curd. Actually, I almost expected it, because this pie has a layer of marshmallows, and my kids love that gooey stuff.

Preparing this raspberry curd pie was quick and easy. The necessary ingredients were readily available, and I already had most of them at home – I only needed to buy the frozen raspberries and marshmallows. Visually, the pie was undoubtedly a showstopper and a big hit with my family. However, taste-wise, it was unfortunately far too sweet, almost like eating pure sugar. Surprisingly, the excessive sweetness wasn't due to the marshmallows, as we initially suspected, but to the raspberry curd itself. This overpowered the delicate flavor. Raspberry flavor Unfortunately, completely lost.

I suspect that the cake would have been much more enjoyable if it had used less sugar. Unfortunately, it turned out to be a real "sugar bomb" for my family, which is why a considerable amount was left over. That's truly regrettable, I must say.

  1. That looks absolutely delicious and seems really quick and easy to make. But I didn't think it had marshmallows on it; I imagine that's very sweet. You could probably make it with egg whites too—then it's like meringue and doesn't have so much sugar! Best regards

  2. And it's already here 😉 Mmm, it looks delicious! When I bake it, I'll definitely use less sugar for the curd. Best, Laura
