Homemade spelt, grain, and oat rolls – more than just a side dish! This is about genuine baking craftsmanship with passion. Because let's be honest, what's better than a fresh, perfectly baked roll?

Spelt and oat rolls with fresh yeast: A test of patience that is well worth the effort.

My spelt, grain, and oat rolls are incredibly easy to make, as they're made with fresh yeast and need some time to rise. Plan on about an hour before these delicious rolls are ready to go in the oven. But the wait is well worth it! After baking, you can enjoy the rolls however you like: with creamy butter, sweet jam, or other delicious toppings. Wildflower honey LieBee honey or an exotic one Avocado-Mango Cream, which I recently prepared. For lovers of savory snacks, there are of course also numerous topping options. Create your perfect roll to your liking!“

3 tips for baking perfect bread rolls

Fresh vs. dried yeast: Which is better for your recipe?
Many recipes ask the question: fresh or dried yeast? For this recipe, I've chosen fresh yeast. A little tip for those who don't always have both types on hand: two 7g packets of dry yeast have the same leavening power as one 42g cube of fresh yeast. The advantage of dry yeast lies in its longer shelf life and easier measurement. Fresh yeast, on the other hand, should ideally be kept in the refrigerator for no longer than twelve days.

The tapping test: How to test if your baked goods are fully baked.
Since every oven is different, baking times can vary. To ensure that rolls or bread are baked through after the recommended time, there's a simple trick: the tapping test. Take the baked goods out of the oven and tap the bottom with your knuckle. A dull thud means it needs more baking time. A hollow sound, on the other hand, indicates that it's ready to serve.

Tips for freezing bread and rolls
Rolls can easily be frozen individually, while bread can be frozen either whole or sliced. For best results, the baked goods should be as fresh as possible. To thaw, it is recommended to defrost the baked goods slowly at room temperature.“

This is how the spelt grain and oat rolls taste.

  • Savory and nutty: Thanks to the spelt, the spelt grain and oat rolls could have a slightly nutty flavor that is particularly appealing to whole grain lovers.
  • Slightly sweet: The honey in the rolls could add a subtle sweetness that would wonderfully complement the hearty taste of the spelt and oatmeal.
  • Crispy crust: By sprinkling with rolled oats and baking at a high temperature, the rolls could have a crispy outer layer that crackles when you bite into it.
  • Fluffy interior: The combination of yeast and the different types of flour could create a soft, airy interior that gives the rolls a pleasant texture.
  • Salty note: Adding salt could give the spelt and oat rolls a slightly salty note, which would enhance and balance the flavor of the other ingredients.

Overall, the spelt, grain, and oat rolls taste like a harmonious blend of different flavors, which are a delight both on their own and with toppings.

How do I make sure the oats stick to the bread rolls?

Before baking, generously brush the shaped dough pieces with water and sprinkle the rolled oats on top. The water acts as a natural binder and ensures a beautifully crisp crust when baked at 220°C. Allowing the dough to rise after sprinkling the oats further enhances this crispness.
