4 FAQs about Caesar salad a la Jamie Oliver

1. What effect does the polenta have on the chicken?

Polenta serves as a gluten-free alternative to classic breading and creates an extremely crispy, golden-yellow crust while keeping the meat juicy inside. By placing the meat in baking paper on 1.5 cm If you flatten it, you ensure that it only takes a few seconds. 3–4 minutes per side It cooks evenly. The result is an aromatic fillet with a rustic bite that harmonizes perfectly with the crisp romaine lettuce.

2. How can I make the dressing particularly aromatic and light?

Instead of using large amounts of oil, this dressing is based on low-fat milk yogurt, This makes it noticeably fresher. The combination of anchovy fillets, Parmesan, and a dash of Worcestershire sauce provides the necessary umami depth, while fresh basil and lemon juice add lightness. A little pro tip: Press the garlic clove directly into the blender so it blends perfectly with the liquid ingredients into a creamy emulsion.

3. Why are we grilling the red chicory and the bacon?

Briefly grilling the chicory removes its bitterness and gives it a delicate sweetness, which is further enhanced by a splash of balsamic vinegar. The bacon is rendered until crispy in the same pan, so its smoky aroma infuses the chicory. This warm contrast to the cool romaine lettuce and fresh cherry tomatoes makes the salad a complex and flavorful experience.

4. Can I also prepare the salad with ready-made schnitzel?

Yes, the recipe offers a handy "quick-fix" option: You can use frozen schnitzel, fry it until golden brown, and keep it warm in the oven while you prepare the vegetables. This saves time when you're short on time during the week. In this case, be sure to still toast the ciabatta in a grill pan to retain the typical roasted flavor that characterizes Caesar salad.

    1. It belongs in a proper Caesar dressing^^ But what would also be interesting: is it really Worcestershire sauce (often made with soy sauce) or Worcestershire sauce (the original without soy sauce, tastes different)?
