Dreamy pastries with marzipan are the perfect complement to this time of year: their delicate sweetness, light almond aroma and buttery tenderness make every bite a small celebration.
Chop the marzipan into small pieces so that it mixes well later.
Separate the eggs and put the yolks into a large mixing bowl.
Add flour, ground almonds, butter, bourbon vanilla sugar, powdered sugar, sugar, the crushed marzipan, and the bitter almond flavoring.
Knead the ingredients into a smooth, pliable dough. This can be done by hand or with a hand mixer fitted with dough hooks.
Chill the dough:
Divide the dough into three portions, form balls from them and wrap them in cling film.
Place the balls in the refrigerator for at least 30 minutes. This will make the dough easier to work with later.
Shaping the dough:
Preheat the oven to 160 degrees fan-assisted (or 180 degrees top/bottom heat).
Roll each portion of dough into strands about 1 cm thick and flatten them slightly.
Cut the strands into pieces approximately 2 cm long using a knife.
Bake:
Place the pieces of dough on a baking sheet lined with parchment paper, leaving some space between them.
Bake the dream pieces for about 14 minutes. They should remain pale and only turn slightly golden yellow at the edges.
Dust with powdered sugar:
Let the cookies cool briefly, but while they are still warm, carefully roll them in powdered sugar.
