This ultimate chocolate cookies are a dream for all those with a sweet tooth: wonderfully crispy on the outside and irresistibly soft on the inside (chewy), they impress with their intense cocoa flavor and melt-in-your-mouth chocolate pieces that make every bite a true moment of pleasure.
In the bowl of a stand mixer with paddle attachment or using an electric mixer, cream the butter and sugar at high speed for 5 minutes until pale, light and fluffy. Now add the egg and vanilla paste and mix to combine them.
Sift together flour, baking powder, and salt. Add to the mixing bowl and mix on low speed for easy blending.
Add the chopped chocolate and mix until just incorporated. Remove the bowl from the mixer and add a few spoonfuls of the mixture by hand using a flexible spatula to ensure the chocolate is evenly distributed.
Cover the bowl and refrigerate for 20 hours. Towards the end of the refrigeration process, preheat the oven to 180°C and line 3 baking trays with parchment paper.
Bake for 13-14 minutes, or until lightly golden and set. The baking time depends on your personal preference. If you like them very soft, bake for 13 minutes. If you like them a little crispy, bake them for 14 minutes. Take them out of the oven. Let them cool on a kitchen wire rack; the chocolate cookies will deflate slightly as they cool. Repeat the baking process with the remaining cookies. Store the leftovers in an airtight container.
